Pioneer Woman Ground Chicken Meatloaf

Delicious and healthy chicken meatloaf with a twist of turkey bacon, perfect for a family meal.

Ingredients

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/4 cup ketchup
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 slices turkey bacon
  • 1/2 cup chopped onion
  • 1 clove garlic, minced

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, egg, ketchup, salt, pepper, onion, and garlic.
  3. Transfer the mixture to a loaf pan.
  4. Lay turkey bacon strips on top of the meatloaf.
  5. Bake for 60 minutes, or until internal temperature reaches 165°F (74°C).

Notes

  • For added flavor, try using smoked turkey bacon.
  • Let the meatloaf rest for 10 minutes before slicing.
