Pink Radish Tzatziki

A refreshing tzatziki made with pink radishes, perfect for any meal.

Ingredients

  • 1 cup pink radishes, grated
  • 1 cup Greek yogurt
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt to taste

Instructions

  1. In a bowl, combine the grated pink radishes and salt. Let it sit for 10 minutes to allow the moisture to draw out.
  2. In another bowl, mix together the Greek yogurt, olive oil, minced garlic, dill, and lemon juice.
  3. Squeeze the excess moisture from the radishes and then add them to the yogurt mixture.
  4. Stir until well combined and adjust seasoning with salt if necessary.
  5. Chill in the refrigerator for at least 30 minutes before serving for best flavor.

Notes

  • Serve with pita chips or as a topping on grilled meats.
  • Can be stored in the fridge for up to 3 days.
