- 1 cup pink radishes, grated
- 1 cup Greek yogurt
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 2 tablespoons fresh dill, chopped
- 1 tablespoon lemon juice
- Salt to taste
- In a bowl, combine the grated pink radishes and salt. Let it sit for 10 minutes to allow the moisture to draw out.
- In another bowl, mix together the Greek yogurt, olive oil, minced garlic, dill, and lemon juice.
- Squeeze the excess moisture from the radishes and then add them to the yogurt mixture.
- Stir until well combined and adjust seasoning with salt if necessary.
- Chill in the refrigerator for at least 30 minutes before serving for best flavor.
