Peruvian Chicken and Rice with Green Sauce

  • 4 pieces chicken thighs
  • 1 cup rice
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 2 garlic cloves
  • 1 bunch cilantro
  • 1 avocado
  • 1 lime
  • 1 teaspoon salt

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add chicken thighs and cook until browned.
  3. Add garlic and cumin, stir for a minute.
  4. Pour in chicken broth and rice, bring to a boil.
  5. Reduce heat, cover and simmer for 20 minutes.
  6. In a blender, combine cilantro, avocado, lime, and salt to make the green sauce.
  7. Serve chicken and rice topped with green sauce.
