- 1.5 pounds chicken thighs
- 2 cups white rice
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 4 cups chicken broth
- 1 cup peas
- 1 bell pepper, chopped
- salt and pepper to taste
- Heat olive oil in a large pot over medium heat. Add the chicken and brown on all sides.
- Remove chicken and set aside. In the same pot, add onion and garlic; sauté until soft.
- Add rice, cumin, paprika, and stir for a minute.
- Pour in chicken broth and add back the chicken. Bring to a boil.
- Cover and reduce to a simmer for 20 minutes. Add peas and bell pepper, cooking for an additional 5 minutes.
Notes
- For added flavor, marinate chicken in spices overnight.
- Adjust cooking time if using different rice.
