Peruvian Chicken and Rice

  • 1.5 pounds chicken thighs
  • 2 cups white rice
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 4 cups chicken broth
  • 1 cup peas
  • 1 bell pepper, chopped
  • salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chicken and brown on all sides.
  2. Remove chicken and set aside. In the same pot, add onion and garlic; sauté until soft.
  3. Add rice, cumin, paprika, and stir for a minute.
  4. Pour in chicken broth and add back the chicken. Bring to a boil.
  5. Cover and reduce to a simmer for 20 minutes. Add peas and bell pepper, cooking for an additional 5 minutes.

Notes

  • For added flavor, marinate chicken in spices overnight.
  • Adjust cooking time if using different rice.
