Perfect Dutch Oven Pumpkin Bread

  • 1 1/2 cups pumpkin puree
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the pumpkin puree, sugar, and vegetable oil until smooth.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, combine the flour, baking soda, salt, cinnamon, nutmeg, and ginger.
  5. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  6. If using, fold in the chopped walnuts.
  7. Pour the batter into a greased Dutch oven.
  8. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean.
  9. Let it cool for a few minutes before serving.
