2 cups graham cracker crumbs
1/2 cup sugar
1/2 cup unsalted butter, melted
24 ounces cream cheese, softened
1 cup sugar
3 large eggs
1 teaspoon vanilla extract
2 cups chopped fresh peaches
1 cup sour cream
Instructions
Preheat the oven to 350°F (175°C).
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a greased baking pan.
In a large bowl, beat the cream cheese and sugar until smooth. Add in eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
Pour the cream cheese mixture over the crust, then top with chopped peaches.
In a small bowl, whisk together the sour cream and a little sugar, then spread it over the peaches.
Bake for 30-35 minutes or until set. Let cool, then refrigerate for at least 4 hours before serving.
