These Peaches and Cream Cheesecake Bars are the perfect summer dessert, combining the sweetness of peaches with a creamy cheesecake filling.

  • 2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups chopped fresh peaches
  • 1 cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a greased baking pan.
  3. In a large bowl, beat the cream cheese and sugar until smooth. Add in eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Pour the cream cheese mixture over the crust, then top with chopped peaches.
  5. In a small bowl, whisk together the sour cream and a little sugar, then spread it over the peaches.
  6. Bake for 30-35 minutes or until set. Let cool, then refrigerate for at least 4 hours before serving.

Notes

  • Serve chilled for a refreshing dessert.
  • Can substitute nectarines for peaches if desired.
