  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 4 slices turkey bacon, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  3. Add garlic and cook for 1 minute.
  4. Add vegetables and cook for about 5-7 minutes until tender.
  5. Combine cooked pasta with the vegetable mixture, add salt, pepper, and red pepper flakes.
  6. Serve hot, enjoy!

Notes

  • Feel free to use any combination of vegetables you like.
  • For a vegetarian version, omit the turkey bacon.
