Parmesan Tomato Zucchini Bake

A deliciously easy comfort dish that highlights the wonderful flavors of zucchini, tomatoes, and Parmesan cheese.

  • 2 medium zucchinis
  • 3 large tomatoes
  • 1 cup grated Parmesan cheese
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis and tomatoes into rounds.
  3. In a large bowl, toss the zucchini and tomato slices with olive oil, salt, pepper, garlic powder, and oregano.
  4. Layer half of the zucchini and tomato mixture in a baking dish.
  5. Sprinkle half of the Parmesan cheese over the first layer.
  6. Repeat the layers with the remaining zucchini, tomatoes, and Parmesan cheese.
  7. Cover the dish with foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 15-20 minutes until the top is golden brown.
  9. Let cool for a few minutes before serving.

Notes

  • For extra flavor, consider adding fresh basil on top before serving.
  • This dish can be served hot or at room temperature.
