4 large russet potatoes
6 slices turkey bacon
1 cup chicken ham, diced
1 medium onion, chopped
3 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon paprika
1/2 cup green onions, chopped
Instructions
In a large pot, cook the turkey bacon until crispy. Remove and set aside.
In the same pot, add butter and sauté onions and garlic until translucent.
Add diced potatoes and chicken ham, then pour in chicken broth. Bring to a boil.
Reduce heat and simmer until potatoes are tender.
Using a potato masher, mash some of the potatoes for a thicker consistency.
Stir in heavy cream, salt, pepper, and paprika. Cook until heated through.
Serve hot, topped with crispy turkey bacon and green onions.
Notes
For extra creaminess, add more heavy cream to taste.
Feel free to use regular bacon instead of turkey for a different flavor.
