  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cook until browned.
  3. Stir in onion and garlic, cooking until softened.
  4. Pour in chicken broth, followed by the orzo and cherry tomatoes.
  5. Season with Italian seasoning, salt, and pepper.
  6. Bring to a boil, then reduce heat to low, and cover.
  7. Cook for about 10-12 minutes until orzo is tender.
  8. Serve warm, garnished with parsley if desired.

  • For added flavor, consider adding spinach or kale in the last few minutes of cooking.
