Nutritious Persian Noodle Soup

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon turmeric
  • 6 cups vegetable broth
  • 1 cup spinach, chopped
  • 1 can chickpeas, drained and rinsed
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  2. Add minced garlic and turmeric, stirring for another minute until fragrant.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add the Persian noodles and cook according to package instructions.
  5. Stir in the spinach and chickpeas during the last few minutes of cooking.
  6. Remove from heat, add lemon juice, and season with salt and pepper.
  7. Serve hot and enjoy!
