This Mouthwatering One Pot Lasagna Soup brings the flavors of traditional lasagna into a warm and comforting soup, topped with turkey bacon for an extra delight.

  • 8 ounces lasagna noodles
  • 8 slices turkey bacon
  • 1 pound ground turkey
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and drain on paper towels.
  2. In the same pot, add ground turkey, onion, and garlic. Cook until the turkey is browned.
  3. Add diced tomatoes, chicken broth, and Italian seasoning. Bring to a boil.
  4. Add the lasagna noodles and cook until tender.
  5. Stir in ricotta and half of the mozzarella cheese until melted.
  6. Serve hot, garnished with crispy turkey bacon and remaining mozzarella.

Notes

  • For a vegetarian version, substitute ground turkey with lentils.
  • This soup can be prepared in advance and reheated before serving.
