- 8 ounces lasagna noodles
- 8 slices turkey bacon
- 1 pound ground turkey
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 4 cups chicken broth
- 2 teaspoons Italian seasoning
- 1 cup ricotta cheese
- 2 cups mozzarella cheese, shredded
- In a large pot, cook the turkey bacon until crispy. Remove and drain on paper towels.
- In the same pot, add ground turkey, onion, and garlic. Cook until the turkey is browned.
- Add diced tomatoes, chicken broth, and Italian seasoning. Bring to a boil.
- Add the lasagna noodles and cook until tender.
- Stir in ricotta and half of the mozzarella cheese until melted.
- Serve hot, garnished with crispy turkey bacon and remaining mozzarella.
