Mouthwatering One Pot Lasagna Soup

A delicious and hearty lasagna soup that combines turkey bacon and chicken ham for a flavorful twist.

  • 1 lb turkey bacon
  • 1 lb chicken ham
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth
  • 1 tbsp Italian seasoning
  • 8 oz lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add chicken ham and cook until browned.
  3. Add onion and garlic, sauté until translucent.
  4. Stir in crushed tomatoes, chicken broth, and Italian seasoning.
  5. Bring to a boil, then add broken lasagna noodles.
  6. Simmer until noodles are cooked through.
  7. Stir in ricotta and half of the mozzarella cheese.
  8. Serve hot, topped with the remaining mozzarella and Parmesan cheese, and fresh basil.

Notes

  • For added flavor, consider adding red pepper flakes.
  • Use gluten-free noodles for a gluten-free option.
