  • 1 cup Gruyère cheese, grated
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken or vegetable broth
  • 1 tablespoon flour
  • 2 sheets puff pastry

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet, heat olive oil and butter over medium heat. Add onions and garlic, and sauté until translucent.
  3. Add diced mushrooms and thyme, cooking until mushrooms are tender.
  4. Sprinkle flour over the mixture and stir to combine.
  5. Slowly pour in broth, stirring constantly until thickened. Season with salt and pepper.
  6. Cut puff pastry into circles and place in greased muffin tins.
  7. Fill each pastry with mushroom mixture and top with Gruyère cheese.
  8. Bake for 20-25 minutes until golden brown.

Notes

  • For an extra flavor, add a splash of white wine to the filling.
