  • 1/4 cup chopped cilantro
  • 1 teaspoon cumin
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup diced tomatoes
  • 2 carrots, sliced
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 2 tablespoons olive oil

Instructions

  1. In a bowl, mix ground beef, rice, egg, salt, pepper, and cilantro.
  2. Form the mixture into meatballs.
  3. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until softened.
  4. Add the meatballs, browning them on all sides.
  5. Pour in beef broth and bring to a boil.
  6. Add tomatoes, carrots, bell pepper, and zucchini.
  7. Reduce heat and let it simmer for 30 minutes.
