Mediterranean Quesadillas

Enjoy a delicious twist on traditional quesadillas with this Mediterranean version featuring turkey bacon, fresh vegetables, and flavorful spices.

  • 4 tortillas
  • 6 slices turkey bacon
  • 1 cup spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup olives, sliced
  • 1 tablespoon olive oil

Instructions

  1. Cook the turkey bacon in a skillet until crispy. Remove and chop into pieces.
  2. In the same skillet, add olive oil and sauté spinach until wilted.
  3. Add the chopped turkey bacon, sun-dried tomatoes, olives, and feta cheese to the skillet.
  4. Place a tortilla in the skillet, add the filling mixture, and top with another tortilla.
  5. Cook until the bottom tortilla is golden brown, then flip and cook the other side.
  6. Remove from skillet, slice, and serve warm.

Notes

  • Feel free to add more vegetables or adjust the spices to your taste.
  • This recipe can be made vegetarian by omitting the turkey bacon.
