  • 1/4 cup maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the pumpkin in half and scoop out the seeds.
  3. In a bowl, mix maple syrup, olive oil, salt, black pepper, and cinnamon.
  4. Brush the mixture over the pumpkin halves.
  5. Place the pumpkin on a baking sheet, cut side down, and roast for 30-40 minutes until tender.
  6. Allow to cool slightly, then slice and serve.
