  • 1/4 cup pure maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the cubed pumpkin, maple syrup, olive oil, cinnamon, nutmeg, salt, and pepper. Toss until evenly coated.
  3. Spread the pumpkin mixture in a single layer on a baking sheet.
