Mango Coconut Panna Cotta

  • 1 cup coconut milk
  • 1 cup heavy cream
  • 1/2 cup sugar
  • 2 teaspoons gelatin
  • 2 tablespoons water
  • 1 ripe mango, pureed
  • 1 teaspoon vanilla extract

Instructions

  1. In a small bowl, sprinkle the gelatin over the water and let it bloom for about 5 minutes.
  2. In a saucepan, combine the coconut milk, heavy cream, and sugar. Heat over medium heat until the sugar dissolves.
  3. Remove from heat and stir in the bloomed gelatin until fully melted.
  4. Mix in the mango puree and vanilla extract.
  5. Pour the mixture into serving glasses and refrigerate for at least 4 hours until set.
  6. Serve chilled, garnished with fresh mango slices.

Notes

  • For a vegan version, replace heavy cream with a dairy-free alternative.
  • Allow the panna cotta to set overnight for best results.
