2 cups diced potatoes
4 ounces turkey bacon
4 ounces chicken ham
1 cup shredded cheese
1/2 cup sour cream
1 tablespoon taco seasoning
2 tablespoons olive oil
1/4 cup chopped green onions
Instructions
Preheat oven to 400°F (200°C).
In a bowl, toss diced potatoes with olive oil and taco seasoning.
Spread the potatoes on a baking sheet and roast for 25-30 minutes or until golden brown.
In a skillet, cook turkey bacon until crispy. Remove and crumble.
In the same skillet, add chicken ham to warm up.
Once the potatoes are done, assemble the bowls with potatoes, chicken ham, crumbled turkey bacon, shredded cheese, sour cream, and top with green onions.
Notes
Feel free to add other toppings like avocado or jalapeños.
