Loaded Potato Taco Bowl

A delicious and nutritious take on the classic taco bowl, featuring loaded potatoes and turkey bacon.

  • 4 medium potatoes
  • 1 cup cooked turkey bacon, chopped
  • 1 cup black beans, drained and rinsed
  • 1/2 cup shredded cheese
  • 1/2 cup Greek yogurt
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 jalapeño, sliced
  • 1 avocado, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the potatoes and bake for about 45 minutes.
  3. While the potatoes are baking, prepare the turkey bacon in a skillet until crispy.
  4. Once the potatoes are done, let them cool slightly, then cut them open and fluff the insides.
  5. Mix in the black beans, turkey bacon, spices, and yogurt.
  6. Top with cheese, jalapeño, and avocado.

  • For a vegetarian option, replace turkey bacon with smoked paprika for flavor.
