  • 2 large potatoes
  • 4 slices turkey bacon
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1/2 cup shredded cheese
  • 1/4 cup chopped green onions

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes, then bake for 45-60 minutes until tender.
  3. While the potatoes are baking, cook the turkey bacon in a skillet until crispy, then crumble.
  4. In a bowl, mix the black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
  5. Once the potatoes are done, slice them open and fluff the insides with a fork.
  6. Top each potato with the bean mixture, crumbled bacon, cheese, and green onions.
