Loaded Potato Taco Bowl

A delightful twist on traditional tacos, featuring loaded potato goodness and crispy turkey bacon.

  • 2 large russet potatoes
  • 1 cup cooked turkey bacon, chopped
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 avocado, diced
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt to taste
  • 2 green onions, chopped

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and pierce the potatoes with a fork, then bake for 45-60 minutes until tender.
  3. While the potatoes are baking, prepare the toppings: mix black beans, corn, chili powder, cumin, and salt in a bowl.
  4. Once the potatoes are done, let them cool slightly, then slice them open and fluff the insides with a fork.
  5. Layer the black bean mixture, turkey bacon, avocado, and cheese over the fluffed potatoes.
  6. Top with sour cream and green onions before serving.

Notes
