  • 1/2 cup unsalted butter, softened
  • 1/3 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/2 cup cream cheese, softened
  • 1/2 cup sugar
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 cup blueberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine butter and powdered sugar until creamy.
  3. Add flour and vanilla extract, mix until crumbly.
  4. Press mixture into the bottom of a tart pan and bake for 15-20 minutes.
  5. In another bowl, whip heavy cream until stiff peaks form.
  6. In a separate bowl, beat cream cheese, sugar, lemon juice, and lemon zest until smooth.
  7. Fold the whipped cream into the cream cheese mixture.
  8. Layer the blueberries on the baked shortbread crust, then pour mousse on top.
  9. Chill for at least 4 hours before serving.
