Lebanese Lemon Lentil Soup

Ingredients

  • 1 cup dried green or brown lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 6 cups vegetable broth
  • 1/4 cup fresh lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, sauté the onions, carrots, and celery until softened.
  2. Add the garlic, cumin, and coriander, cooking until fragrant.
  3. Stir in the lentils and broth. Bring to a boil, then reduce heat and simmer until lentils are tender.
