Layered Sweet Potato Butternut Squash Carrot Lasagna

This Layered Sweet Potato Butternut Squash Carrot Lasagna is a delightful and healthy dish perfect for any occasion.

Ingredients

  • 3 cups sliced sweet potatoes
  • 2 cups sliced butternut squash
  • 2 cups grated carrots
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. In a large mixing bowl, combine ricotta cheese, garlic powder, salt, and pepper.
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  5. Layer 3 lasagna noodles in the dish, followed by half of the sweet potato, butternut squash, and carrot mixture.
  6. Spread half of the ricotta mixture over the vegetables, followed by a layer of mozzarella.
  7. Repeat the layering process, finishing with noodles, sauce, and remaining mozzarella and parmesan.
  8. Bake for 45-50 minutes until bubbly and golden.
  9. Let cool for 10 minutes before slicing and serving.

Notes

  • You can add more vegetables as per your preference.
  • Make sure to cover the lasagna with foil for the first half of baking.
