Layered Sweet Potato Butternut Squash Carrot Lasagna

A delicious and healthy layered lasagna made with sweet potatoes, butternut squash, and carrots.

Ingredients

  • 2 large sweet potatoes
  • 2 cups butternut squash, diced
  • 1 cup carrots, grated
  • 2 cups ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the sweet potatoes into thin rounds.
  3. In a baking dish, layer sweet potatoes, butternut squash, and carrots.
  4. Spread a layer of ricotta cheese over the vegetables.
  5. Sprinkle garlic, oregano, salt, and pepper over the layers.
  6. Add a layer of mozzarella and parmesan cheese.
  7. Repeat the layers until all ingredients are used.
  8. Cover with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  10. Let it cool for 10 minutes before serving.

Notes

  • For extra flavor, add fresh basil or spinach in the layers.
  • Use a food processor for quicker chopping of vegetables.
