Layered Mediterranean Vegetable Lasagna

A delicious and easy recipe for layered Mediterranean vegetable lasagna that anyone can make.

  • 9 lasagna noodles
  • 2 cups marinara sauce
  • 1 cup ricotta cheese
  • 2 cups spinach, fresh
  • 1 cup zucchini, sliced
  • 1 cup bell pepper, chopped
  • 1 cup mushrooms, sliced
  • 2 cups mozzarella cheese, shredded
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. In a skillet, heat olive oil and sauté zucchini, bell pepper, and mushrooms until tender.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Layer 3 noodles over the sauce, followed by ricotta cheese, sautéed vegetables, and spinach.
  6. Repeat the layers until all ingredients are used, finishing with marinara sauce and mozzarella on top.
  7. Bake in the preheated oven for 30-35 minutes.
  8. Let it cool for a few minutes before serving.

Notes

  • For added flavor, sprinkle fresh basil on top before serving.
