- 3 pounds beef chuck roast
- 6 slices turkey bacon
- 1 tablespoon vegetable oil
- 1 onion chopped
- 5 cloves garlic minced
- 1 cup beef broth
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon sesame oil
- 2 teaspoons ground ginger
- 2 teaspoons black pepper
- 2 carrots sliced
- 2 potatoes cubed
- Preheat the oven to 300°F (150°C).
- In a large Dutch oven, cook the turkey bacon until crispy, then remove and set aside.
- In the same pot, sear the beef chuck roast on all sides until browned.
- Add the onion and garlic, sautéing until fragrant.
- Stir in the beef broth, soy sauce, brown sugar, sesame oil, ginger, and pepper.
- Return the bacon to the pot, adding the carrots and potatoes.
- Cover and transfer to the oven, cooking for about 3 hours or until the meat is tender.
- Remove from the oven and let rest before slicing.
