Korean Style Pot Roast

A delicious take on pot roast featuring Korean flavors, tender beef, and savory turkey bacon.

  • 3 pounds beef chuck roast
  • 6 slices turkey bacon
  • 1 tablespoon vegetable oil
  • 1 onion chopped
  • 5 cloves garlic minced
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 2 teaspoons ground ginger
  • 2 teaspoons black pepper
  • 2 carrots sliced
  • 2 potatoes cubed

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large Dutch oven, cook the turkey bacon until crispy, then remove and set aside.
  3. In the same pot, sear the beef chuck roast on all sides until browned.
  4. Add the onion and garlic, sautéing until fragrant.
  5. Stir in the beef broth, soy sauce, brown sugar, sesame oil, ginger, and pepper.
  6. Return the bacon to the pot, adding the carrots and potatoes.
  7. Cover and transfer to the oven, cooking for about 3 hours or until the meat is tender.
  8. Remove from the oven and let rest before slicing.

Notes

  • You may substitute beef broth with vegetable broth for a lighter option.
  • For extra flavor, marinate the beef overnight.
