Kale Quinoa Salad

A delicious and nutritious salad packed with protein and flavor.

Ingredients

Scale
  • 1 cup quinoa
  • 4 cups chopped kale
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • salt and pepper to taste

Instructions

  1. Cook the quinoa according to package instructions and let it cool.
  2. In a large bowl, combine the chopped kale, cherry tomatoes, cucumber, red onion, and feta cheese.
  3. Add the cooled quinoa to the vegetables.
  4. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
