  • 4 slices turkey bacon
  • 2 pounds chicken thighs
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cups red wine
  • 1 cup chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same skillet, brown the chicken thighs on both sides.
  3. Add the onions and garlic, cooking until softened.
  4. Stir in the red wine, chicken broth, tomato paste, and thyme.
  5. Return the bacon to the skillet, cover, and simmer for 40 minutes.
  6. Season with salt and pepper to taste before serving.
