Juicy Garlic Parmesan Chicken Meatloaf

A savory and moist chicken meatloaf packed with flavor from garlic and parmesan, and enhanced with the irresistible taste of turkey bacon.

Ingredients

  • 1 pound ground chicken
  • 1/2 cup garlic, minced
  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 5 slices turkey bacon, cooked and chopped
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the ground chicken, minced garlic, breadcrumbs, parmesan cheese, eggs, salt, black pepper, turkey bacon, and parsley. Mix well.
  3. Transfer the mixture into a loaf pan and shape it into a loaf.
  4. Bake for 50-60 minutes or until a meat thermometer reads 165°F (75°C).
  5. Let it cool for 10 minutes before slicing and serving.

Notes

  • For added moisture, you can drizzle some olive oil on top before baking.
  • Serve with a side of steamed vegetables for a complete meal.
