  • 4 strips turkey bacon
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 2 cups water
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. Add onion and garlic to the pot, sauté until translucent.
  3. Pour in chicken broth and water, then add chicken ham, carrots, and celery.
  4. Stir in thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Add the chopped turkey bacon back to the pot and serve hot.

Notes

  • This soup can be customized with any leftover vegetables you have.
