  • 2 cups cooked chicken, shredded

  • 2 cups fresh spinach
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, garlic, carrots, and celery; sauté until softened.
  3. Pour in chicken broth and add thyme, salt, and pepper; bring to a boil.
  4. Stir in cooked chicken and pasta if using; cook until pasta is tender.
  5. Add spinach and lemon juice; simmer for 2 minutes.
  6. Serve hot, garnished with fresh herbs if desired.
