Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 4 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups spinach
  • 1 carrot, diced
  • 1 onion, diced
  • 2 tablespoons olive oil

Instructions

  1. In a bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic, and Italian seasoning.
  2. Form into small meatballs.
  3. In a large pot, heat olive oil over medium heat; sauté onions and carrots until soft.
  4. Add meatballs to the pot and brown on all sides.
  5. Pour in beef broth and diced tomatoes; bring to a boil.
  6. Reduce heat and simmer for 20 minutes.
  7. Stir in spinach and cook until wilted.
