- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 4 cups beef broth
- 1 can (14.5 ounces) diced tomatoes
- 2 cups spinach
- 1 carrot, diced
- 1 onion, diced
- 2 tablespoons olive oil
- In a bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, garlic, and Italian seasoning.
- Form into small meatballs.
- In a large pot, heat olive oil over medium heat; sauté onions and carrots until soft.
