1 cup rolled oats
1/2 cup mashed ripe peaches
1/4 cup almond butter
1/4 cup honey or maple syrup
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup chopped nuts (optional)
Instructions
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, mix together the rolled oats, mashed peaches, almond butter, honey or maple syrup, baking powder, cinnamon, and salt until well combined.
If desired, fold in the chopped nuts.
Drop tablespoon-sized portions of the mixture onto the prepared baking sheet.
Bake for 15-20 minutes or until the cookies are golden brown.
