- 1 cup rolled oats
- 1/2 cup grated carrots
- 1/4 cup honey or maple syrup
- 1/4 cup almond flour
- 1/4 cup coconut oil, melted
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup crushed walnuts (optional)
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the rolled oats, grated carrots, honey or maple syrup, almond flour, melted coconut oil, cinnamon, baking soda, and salt until well combined.
- If using, fold in the crushed walnuts.
- Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
