Healthy Carrot Cake Oatmeal Cookies

Ingredients

  • 1 cup rolled oats
  • 1/2 cup grated carrots
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond flour
  • 1/4 cup coconut oil, melted
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup crushed walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the rolled oats, grated carrots, honey or maple syrup, almond flour, melted coconut oil, cinnamon, baking soda, and salt until well combined.
  3. If using, fold in the crushed walnuts.
  4. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
  5. Bake for 10-12 minutes until golden brown.
  6. Allow to cool before serving.
