Ingredients

  • 1 zucchini
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 eggplant
  • 4 slices of whole grain bread
  • 1/4 cup hummus
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Slice the zucchini, red and yellow bell peppers, and eggplant.
  3. Brush the vegetables with olive oil and sprinkle with salt and black pepper.
  4. Grill the vegetables for about 5-7 minutes on each side until they are tender.
  5. Spread hummus on one side of each slice of bread.
  6. Layer the grilled veggies on two slices of bread and top with the other slices.
  7. Grill the sandwich on the grill for 2-3 minutes on each side until golden brown.
  8. Serve immediately.

Notes

  • For added flavor, marinate the vegetables in balsamic vinegar before grilling.
  • Feel free to add cheese if desired.
