- 1 red bell pepper
- 1 yellow bell pepper
- 1 eggplant
- 4 slices of whole grain bread
- 1/4 cup hummus
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- Preheat the grill to medium-high heat.
- Slice the zucchini, red and yellow bell peppers, and eggplant.
- Brush the vegetables with olive oil and sprinkle with salt and black pepper.
- Grill the vegetables for about 5-7 minutes on each side until they are tender.
- Spread hummus on one side of each slice of bread.
- Layer the grilled veggies on two slices of bread and top with the other slices.
