Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 cup corn, fresh or frozen
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 2 tablespoons lime juice
  • 1/4 cup sour cream
  • 2 tablespoons mayonnaise
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix shrimp with salt, pepper, and half of the lime juice.
  3. Grill shrimp for 2-3 minutes on each side until opaque.
  4. In another bowl, combine avocados, corn, red onion, cilantro, and remaining lime juice.
  5. In a small bowl, whisk together sour cream, mayonnaise, garlic, and a pinch of salt.
  6. To serve, place grilled shrimp in a bowl, top with avocado corn salsa, and drizzle with creamy garlic sauce.

Notes

  • Adjust seasoning to taste.
  • Can substitute fresh corn with canned corn.
