Ingredients

  • 2 cups sliced cactus
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the grill to medium-high heat.
  2. Lightly coat the cactus slices with olive oil and season with salt and pepper.
  3. Grill the cactus for about 3-4 minutes on each side until charred.
  4. Remove from grill and allow to cool, then chop into bite-sized pieces.
  5. In a large bowl, combine the grilled cactus, red bell pepper, avocado, red onion, and cilantro.
  6. Drizzle with lime juice and toss gently to combine.
