- 2 cups sliced cactus
- 1 red bell pepper, diced
- 1 avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Preheat the grill to medium-high heat.
- Lightly coat the cactus slices with olive oil and season with salt and pepper.
- Grill the cactus for about 3-4 minutes on each side until charred.
- Remove from grill and allow to cool, then chop into bite-sized pieces.
