  • 4 cups vegetable stock
  • 1 cup diced turkey bacon
  • 1 cup diced chicken ham
  • 2 cups chopped green beans
  • 2 cups chopped spinach
  • 1 cup diced zucchini
  • 1 cup diced celery
  • 1 cup diced onion
  • 3 cloves minced garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1 cup small pasta (like ditalini)
  • salt to taste

Instructions

  1. In a large pot, heat a little oil over medium heat. Add the turkey bacon and cook until crispy.
  2. Add the onion, garlic, celery, and zucchini. Sauté until vegetables are tender.
  3. Pour in the vegetable stock and bring to a simmer.
  4. Add the green beans and pasta; cook according to pasta package instructions.
  5. Stir in the spinach, chicken ham, thyme, pepper, and salt. Cook until the spinach is wilted and everything is heated through.
  6. Serve hot.
