Greek White Bean Soup

A delicious and nutritious Greek White Bean Soup that is easy to make and perfect for a cozy meal.

Ingredients

  • 1 cup dried white beans
  • 4 cups vegetable broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 sticks celery, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice

Instructions

  1. Soak the beans overnight in water.
  2. Drain and rinse the beans, then add to a pot with the vegetable broth.
  3. Bring to a boil, then reduce to a simmer.
  4. In a separate pan, heat olive oil and sauté onion, garlic, carrots, and celery until soft.
  5. Add the sautéed vegetables to the pot with the beans.
  6. Stir in oregano, salt, and pepper.
  7. Simmer for 40-50 minutes until beans are tender.
  8. Add lemon juice before serving.
