- 1 cup long-grain rice
- 2 cups vegetable broth
- 1 lemon, juiced and zested
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- Rinse the rice under cold water until the water runs clear.
- In a pot, combine the vegetable broth, olive oil, salt, and pepper. Bring to a boil.
- Add the rice and lemon juice, reduce heat, cover, and simmer for 18-20 minutes.
