Greek Lemon Rice Recipe

  • 1 cup long-grain rice
  • 2 cups vegetable broth
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a pot, combine the vegetable broth, olive oil, salt, and pepper. Bring to a boil.
  3. Add the rice and lemon juice, reduce heat, cover, and simmer for 18-20 minutes.
  4. Once done, remove from heat and let it sit covered for 5 minutes.
  5. Add lemon zest and parsley, fluff with a fork, and serve.
