Greek Lemon Chicken Soup

A warm and comforting classic that brings the flavors of Greece to your table.

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts
  • 6 cups chicken broth
  • 1 cup rice or orzo
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh dill, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic and cook for another minute.
  3. Place the chicken breasts in the pot and pour the chicken broth over them. Bring to a boil, then reduce to a simmer.
  4. Cook the chicken for about 20 minutes, or until fully cooked.
  5. Remove the chicken from the pot and let it cool before shredding.
  6. Add the rice or orzo to the broth and cook according to package instructions.
  7. In a bowl, whisk the eggs and lemon juice together. Slowly add a ladle of the hot broth to temper the eggs, then whisk it back into the pot.
  8. Add the shredded chicken and fresh dill, and season with salt and black pepper to taste. Serve hot.

Notes

  • This soup is best enjoyed fresh, but it can be refrigerated for a few days.
  • Adjust the lemon juice according to your taste preference for tanginess.
