- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts
- 6 cups chicken broth
- 1 cup rice or orzo
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1/4 cup fresh dill, chopped
- Salt to taste
- Black pepper to taste
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and cook for another minute.
- Place the chicken breasts in the pot and pour the chicken broth over them. Bring to a boil, then reduce to a simmer.
- Cook the chicken for about 20 minutes, or until fully cooked.
- Remove the chicken from the pot and let it cool before shredding.
- Add the rice or orzo to the broth and cook according to package instructions.
- In a bowl, whisk the eggs and lemon juice together. Slowly add a ladle of the hot broth to temper the eggs, then whisk it back into the pot.
- Add the shredded chicken and fresh dill, and season with salt and black pepper to taste. Serve hot.
