2 cups cooked quinoa
1 pound boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 cup red onion, thinly sliced
1/2 cup feta cheese, crumbled
1/4 cup kalamata olives
1/4 cup fresh parsley, chopped
1 lemon, juiced
Instructions
In a bowl, combine the olive oil, oregano, garlic powder, salt, and pepper. Add the chicken and coat evenly. Let marinate for at least 30 minutes.
Grill or pan-cook the chicken over medium heat for about 6-7 minutes on each side or until fully cooked. Let it rest before slicing.
In a large bowl, mix the quinoa, tomatoes, cucumber, red onion, feta cheese, olives, and parsley.
Add the sliced chicken on top of the quinoa mixture and drizzle with lemon juice before serving.
