  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup red onion, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice

Instructions

  1. Preheat grill or skillet over medium heat.
  2. Season chicken breasts with oregano, garlic powder, salt, and pepper.
  3. Cook chicken for 6-7 minutes on each side or until fully cooked.
  4. Remove from heat and let rest before slicing.
  5. In a bowl, combine cooked rice, tomatoes, cucumber, red onion, feta, olives, and parsley.
  6. Add olive oil and lemon juice, then mix well.
  7. Top the rice mixture with sliced chicken.
