  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted and sliced

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced chicken, garlic powder, paprika, oregano, salt, and pepper. Cook until chicken is golden and cooked through.
  3. In serving bowls, layer cooked quinoa, chicken, cherry tomatoes, cucumber, feta cheese, and olives.
  4. Drizzle with additional olive oil if desired and serve warm.
