This delicious twist on the classic Chicken Cordon Bleu uses turkey bacon for a lighter option without sacrificing flavor.

  • 2 chicken breasts
  • 4 slices turkey bacon
  • 4 slices Swiss cheese
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup breadcrumbs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Butterfly the chicken breasts and pound them to an even thickness.
  3. Place a slice of turkey bacon and a slice of Swiss cheese on each breast.
  4. Fold the chicken over and secure with toothpicks.
  5. Set up a breading station with flour, beaten eggs, and breadcrumbs.
  6. Dredge each piece of chicken in flour, dip in eggs, and coat in breadcrumbs.
  7. Heat olive oil in a skillet over medium heat and sear each chicken piece until golden brown.
  8. Transfer the chicken to the oven and bake for 20-25 minutes, until fully cooked.

  • Use a meat thermometer to ensure the chicken is cooked to an internal temperature of 165°F (74°C).
