Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, and ginger; sauté until fragrant.

  3. Stir in turmeric powder and cook for 1 minute.
  4. Pour in vegetable broth and coconut milk, bring to a simmer.
