Ingredients

  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
  • ½ cup brown sugar
  • ½ cup molasses
  • 1 large egg
  • ½ cup vegetable oil
  • ½ cup hot water

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with paper liners.
  2. In a large bowl, mix together the flour, baking soda, ginger, cinnamon, cloves, and salt.
  3. In another bowl, whisk together the brown sugar, molasses, egg, vegetable oil, and hot water until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Pour the batter into the prepared muffin pan, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before serving.
